Food hygiene - Production and dispense of hot beverages from hot beverage appliances - Hygiene requirements, migration test

This European Standard specifies hygiene requirements which establish prerequisites for production of
hot beverages, such as coffee and coffee specialities, tea, cocoa and dairy beverages from hot beverage
appliances for commercial and household use in conformity with the food hygiene regulations and for
placing on the market. Appliances for self-service are within the scope of this standard.
For this purpose, this standard specifies general hygienic requirements for the construction, material
and operation of the appliances concerned. It contains, in particular, requirements for hygienic and
professional operation, for cleaning, disinfection and descaling as well as requirements for a migration
test.
This European Standard applies to appliances before their entering on the market (new machines) and
it also gives an informative Annex for appliances already in use (see Annex A).
This European Standard does not deal with any requirements relevant to work safety. This European
Standard deals neither with electrical safety nor with performance requirements. EN 60335-2-15 and
EN 60335-2-75 have to be used for commercially used appliances. Methods for measuring the
performance of electric household coffee makers are provided in EN 60661.

Diese Europäische Norm legt Hygieneanforderungen fest, die die Voraussetzung schaffen, Heißgetränke, wie Kaffee- und Kaffeespezialitäten, Tee, Kakao und Milchgetränke, mit Heißgetränkebereitern für den gewerblichen und häuslichen Gebrauch in Übereinstimmung mit den lebensmittelhygienischen Vorschriften herzustellen und in den Verkehr zu bringen. Geräte zur Selbstbedienung sind in den Anwendungsbereich dieser Norm eingeschlossen.
Diese Norm legt zu diesem Zweck allgemeine hygienische Anforderungen an die Konstruktion, die Werkstoffe und das Betreiben der betroffenen Geräte fest. Sie enthält insbesondere Anforderungen zum hygienischen und fachgerechten Betrieb, zur Reinigung, Desinfektion und Entkalkung sowie Anforderungen an eine Migrationsprüfung.
Diese Europäische Norm gilt für Getränkebereiter (neue Maschinen) vor ihrem in Verkehr bringen auf dem Markt und enthält ferner einen informativen Anhang für in Gebrauch befindliche Getränkebereiter (siehe Anhang A).
Diese Europäische Norm behandelt keine arbeitssicherheitsrelevanten Anforderungen. Diese Europäische Norm behandelt weder elektrische Sicherheits- noch Gebrauchsanforderungen. Hierfür sind EN 60335-2-15 und EN 60335-2-75 für gewerblich genutzte Geräte anzuwenden. Die Verfahren zur Messung der Gebrauchseigenschaften elektrischer Haushalt-Kaffeebereiter sind in EN 60661 angegeben.

Hygiène alimentaire - Production et remise de boissons chaudes préparées par des producteurs de boissons chaudes - Exigences hygiéniques

La présente Norme européenne spécifie les exigences sanitaires qui établissent les préalables à la production de boissons chaudes, telles que le café et les spécialités à base de café, le thé, le cacao et les boissons lactées par des appareils de préparation de boissons chaudes à usage commercial et domestique conformément aux réglementations sanitaires, et à la mise sur le marché. Les distributeurs automatiques font partie du domaine d’application de la présente norme.
À cet égard, la présente norme spécifie les exigences sanitaires générales applicables à la conception, à la fabrication et au fonctionnement des appareils concernés. Elle contient notamment les exigences relatives aux bonnes pratiques professionnelles et d’hygiène pour le nettoyage, la désinfection et le détartrage des appareils ainsi que les exigences applicables à un essai de migration.
La présente Norme européenne s’applique aux appareils avant leur mise sur le marché (appareils neufs) et fournit également une Annexe informative pour les appareils en service (voir l’Annexe A).
La présente Norme européenne ne concerne pas les exigences applicables à la sécurité au travail. Elle ne contient ni exigences de sécurité électrique ni exigences de performance. Les normes EN 60335-2-15 et EN 60335-2-75 doivent être utilisées pour les appareils du commerce. L’EN 60661 décrit les méthodes de mesure de l’aptitude à la fonction des cafetières électriques à usage domestique.

Ta evropski standard določa higienske zahteve kot predpogoj za proizvodnjo toplih napitkov, kot so kava in kavni napitki, čaj, kakav ter mlečni napitki iz naprav za tople napitke za komercialno in domačo uporabo v skladu s predpisi glede higiene živil ter za uvrščanje na trg. Ta standard zajema samopostrežne naprave.  
Za ta namen ta standard določa splošne higienske zahteve za izdelavo, material in delovanje zadevnih naprav. Vključuje zlasti zahteve za higiensko in strokovno delovanje, čiščenje, razkuževanje in odstranjevanje vodnega kamna, kot tudi zahteve za migracijski preskus.
Ta evropski standard se uporablja za naprave, ki še niso na voljo na trgu (nove naprave), in vključuje informativni dodatek za naprave, ki so že v uporabi (glej dodatek A).
Ta evropski standard ne obravnava zahtev glede varnosti pri delu. Ta evropski standard ne obravnava zahtev glede električne varnosti niti glede zmogljivosti. Za naprave za komercialno uporabo je treba uporabljati standarda EN 60335-2-15 in EN 60335-2-75. Metode za merjenje zmogljivosti električnih gospodinjskih aparatov za pripravo kave za domačo uporabo so podane v standardu EN 60661.

ISBN: 978–92–871–7703–2. 4 Requirements 4.1 General For the production and dispensation of hot beverages from hot beverage appliances to the user, the requirements for each relevant legal provision shall be conformed to.
NOTE In particular, the Regulation (EC) No 1935/2004 [2], Regulation (EC) No 2023/2006 [3] and the applicable hygiene provisions (see bibliography) apply. To ensure this for the production and dispensation of hot beverages from hot beverage appliances, the following requirements shall be conformed to. 4.2 Proper handling of products a) Hot beverages shall be placed on the market by way of hot beverage appliances, so that they, under observation of the necessary care, are not exposed to adverse influences during processing, storage and distribution. Depending on product, each product-specific temperature shall be taken into account. b) Water for hot beverages from hot beverage appliances shall reach a minimum temperature of 65 °C over the course of the product preparation. 4.3 Equipment 4.3.1 Materials and surfaces Materials in the food area shall fulfil the following requirements: a) they shall correspond to the legal requirements; b) they shall not dispense any parts of materials into the beverage which are questionable in regards to health, odour or taste or are technically avoidable; c) they shall be corrosion-resistant. NOTE 1 Corrosion-resistant materials resist the usual chemical or electrochemical stresses. This includes production processes, cleaning and disinfection in accordance with the operating instructions. NOTE 2 For materials in the food area, Article 3 of Regulation (EC) No 1935/2004 [2] applies. Materials in the food and splash area shall fulfil the following requirements: d) they shall demonstrate a surface quality which corresponds with the specific operational and hygienic requirements; e) they shall be abrasion-proof in correspondence with the intended application; SIST EN 16889:2016
