Diese Internationale Norm legt ein Verfahren fest, bei dem die Bestimmung des Gehalts an unverseifbaren Bestandteilen von tierischen und pflanzlichen Fetten und Ölen mittels Diethylether-Extraktion durchgeführt wird.
Dieses Verfahren ist nicht auf Wachse anwendbar und ergibt außerdem bei bestimmten Fetten mit einem hohen Anteil an unverseifbaren Bestandteilen, z. B. bei Fetten von Seetieren, näherungsweise Ergebnisse.
Das in ISO 18609 beschriebene Verfahren darf dann angewendet werden, wenn klimatische Bedingungen oder Vorschriften die Verwendung von Diethylether nicht zulassen.

La présente Norme internationale spécifie une méthode de référence pour la détermination de la teneur en matières insaponifiables des corps gras d'origines animale et végétale, par extraction à l'oxyde diéthylique.  Cette méthode n'est pas applicable aux cires et donne du reste des résultats approximatifs avec certaines matières grasses à teneur élevée en matières insaponifiables, par exemple avec les corps gras provenant d'animaux marins.  Une méthode à l'hexane, donnée dans l'ISO 18609, peut être utilisée lorsque les conditions climatiques ou la réglementation ne permettent pas l'emploi de l'oxyde diéthylique.

Foreword
The text of the International Standard from Technical Committee ISO/TC 34 "Agricultural food
products" of the International Organization for Standardization (ISO) has been taken over as an
European Standard by Technical Committee CEN/TC 307 "Oilseeds, vegetable and animal fats
and oils and their by-products - Methods of sampling and analysis", the secretariat of which is
held by AFNOR.
This European Standard shall be given the status of a national standard, either by publication of
an identical text or by endorsement, at the latest by February 2002, and conflicting national
standards shall be withdrawn at the latest by February 2002.
This European Standard replaces EN ISO 3596-1:2000.
According to the CEN/CENELEC Internal Regulations, the national standards organizations of
the following countries are bound to implement this European Standard: Austria, Belgium, Czech
Republic, Denmark, Finland, France, Germany, Greece, Iceland, Ireland, Italy, Luxembourg,

Foreword
ISO (the International Organization for Standardization) is a worldwide federation of national standards bodies (ISO

1 Scope
This International Standard specifies a method using diethyl ether extraction for the determination of the
unsaponifiable matter content of animal and vegetable fats and oils.
This method is not applicable to waxes and, moreover, gives approximate results with certain fats of high
unsaponifiable matter content, for example with fats derived from marine animals.
A method given in ISO 18609 may be used when climatic conditions, or regulations, do not permit the use of diethyl
ether.

3 Term and definition
For the purposes of this International Standard, the following term and definition applies.
3.1
unsaponifiable matter
all the substances present in the product which, after saponification of the latter by potassium hydroxide and
extraction by a specified solvent, are not volatile under the specified operating conditions
4Principle
The fat or oil is saponified by boiling under reflux with an ethanolic potassium hydroxide solution. The
unsaponifiable matter is extracted from the soap solution by diethyl ether. The solvent is evaporated and the
residue is weighed after drying.
